There might be a limited selection of weapons, but I find them all satisfying to use. Doom might have more complexity and nuance to the combat, but the squishiness of Wolfenstein's enemies makes them more fun to blow away for me. And the fact that even a wimpy guard shooting you from behind can be an existential threat really amps up the tension.
I know the Wolfendoom releases exist, but I wish there was a game that captured the strengths of both Wolfenstein and Doom while still keeping things simple and more closely rooted in Wolfenstein aesthetically.

Doom was obviously heavy on the action, but there's also more variety in terms of secrets and exploration. Wolfenstein mainly just has hidden passages due to engine limitations. The more powerful Doom engine allows for much more ambitious maps to explore too. Wolfenstein has nothing like Odyssey of Noises from The Plutonia Experiment or Central Processing from TNT: Evilution. And while it might sound odd to say, but completing Doom maps can feel a bit like solving a puzzle at times in regard to coming up with the best order to go through parts of the map or deal with enemies.
Doom definitely is more fleshed out, but I think I prefer the more straightforward nature of Wolfenstein. Doom's maps offer more of a feeling of adventure and can be downright haunting in their memorability and atmosphere, but at the same time I'm not much into the exploration aspect of the gameplay. I'd rather just go through rooms and blow enemies away (or die in the process). One thing about Wolfenstein's limitations that I think is actually positive is that trying to progress through the level feels less abstruse. There are keys and exits to look for, but there are no switches or triggers put in odd locations. On some maps Doom is just a pain to deal with if you're like me and just want to get on with the shooting.
Another thing to mention is that I like Wolfenstein's enemy-stunning behavior better than Doom's. It might make enemies easier to deal with, but it's really satisfying the way they react more to attacks from the player.
