This new remake adds a lot of new features like online multiplayer and challenge modes. They really expanded on the cutscenes to strengthen the lore. I don't have Switch 2 yet, but this would definitely be on my list because I think it would be cool to play through Star Fox 64 again, which I haven't done in like 25 years, with modern graphics, and the multiplayer is bound to be a lot of fun.
