Whenever you're doing a downgrade port, there is a right way and a wrong way to do it. The former fully utilizes the system's capabilities, the latter is just slapped together to make a buck.
Switch is more powerful than PS3/Xbox 360, so there's no reason why its games can't look better than the best of those.
For example, they did a pretty decent job on the Witcher 3 port, the developer even said it could not have been done on PS3.
