Scientific theories about the world provide the ability to predict the state of things from one point in time to the next. For example in physics we have Newton's theory of universal gravitation. It produces a set of equations where the positions and masses of objects can be input along with time, and they produce accurate predictions about that specific object's position at future times.
You cannot do this with supply and demand "theory". When you attempt to actually apply supply and demand in a quantitative manner on something specific, in order to predict prices based on measures of supply and demand, you don't arrive at useful and accurate predictions about the real world. Because in the end supply and demand is not really a scientific theory, it's an ideology. In fact it's more of an expression of wishful thinking: It exists to make economists feel good about markets. It is a philosophic exercise putting on pretensions of scientificity through vague mathematics and graph theory, AKA a pseudoscience.
