I dislike digital photography, but even when movies are shot on film these days they look like shit to me. I don't know if there's some post-production shit going on or if the film stocks movies are shot with are just really bland.

Probably a combination of both. Digital color enhancement of film has been around for longer than pure digital, so they're probably still using that.
