Green carbs baby. Throwing a handful in soup broth really helps make a soup filling, but my favorite hands down is in a vegetable stir fry with caramelized onions as a side dish. Perfect with any meat. I don't even throw away the stalk anymore, thin slice or julienne that hoe and it absorbs all flavor.
