The claim is that cured meat causes cancer because of nitrates, specifically that a cancer causing chemical is produced when when the proteins in the meat interact with the nitrites while being cooked or in your stomach.
Most meat (ham, pepperonis, etc.) sold as "uncured" is actually just cured meat that uses celery powder for the high nitrate content to cure it, instead of mineral nitrate.
So from a scientific perspective if cured meat causes cancer "uncured" meat is just as likely to do so.
